Robert Parker comments on Volnay Premier Cru Les Champans 2015: “The 2015 Volnay 1er Cru Champans has an expressive bouquet for this habitually taciturn domaine (at least in its youth). This is bestowed with a comparatively opulent bouquet with rounded red cherry and wild strawberry scents, almost Santenots-like in style. The palate is supple and rounded on the entry, belying the structure that lies underneath. Yet there is fine grip on the finish and it lingers long and tenderly in the mouth. This has great potential - one of Jean-Pierre Charlot's best wines this vintage.”

History
1840
Domaine Joseph Voillot has been managed by Etienne Chaix since 2000. His predecessor is his uncle Jean-Pierre Charlot.
The domaine was created in 1840 by Joseph Voillot, who owned some vineyards in Volnay. The following history of the domaine is a history of vineyards extension by his successors. His son Jean-Baptiste Voillot had added some plots in Pommard Clos Micault. Marius Voillot, the third generation of family winemakers, obtained the terroirs of Pommard Rugiens, Volnay Frémiets and Meursault Cras. He also extended the Volnay vineyards after his wife Celine Rossignol inherited some from her family. Their son, Joseph Voillot, added Meursault Chevaliéres, Volnay Caillerets, Pommard Pézerolles and Epenots. After Joseph Voillot the domaine passed to Jean-Pierre Charlot, who was the first at the domaine who started bottling the whole crop and began exporting domains’ wines.
Approach
Certified sustainable by HVE
The vineyards of the Domaine Joseph Voillot are farmed by a sustainable approach according to HVE certificate. The philosophy of Etienne Chaix is providing environmentally friendly viticulture, without using herbicides.
Harvesting is made by hand. The first sorting is done at the vineyard, before going to the winery, where the sorting at a vibrating table is conducted, if necessary.
The red wines are destemmed, punched down and put into vats for 14 to 18 days of maceration.
The white wines are pressed in whole bunches. Alcoholic fermentation is carried out in vats.
Fermentation is conducted completely from the wild yeast to preserve the uniqueness of each terroir. For maturing 10 to 15 percent of the new barrels is used. The innovative DIAM closures are applied.
