Domaine Chavy-Chouet
Domaine Chavy-Chouet is an outstanding domaine in Meursault, Burgundy. The estate consists of 15 hectares. Current winemaker is Romaric Chavy, whose wines are famous for being beautifully pure and fragrant, neither heavy nor buttery. Romaric Chavy is not a fan of the current tendency for an ultra-mineral style of Meursault which, he thinks, will not age well.
The top wines of Domaine Chavy-Chouet are: Meursault Premier Cru Les Genevrières, Meursault Premier Cru Les Charmes, and Volnay Premier Cru Sous la Chapelle.
Meursault Premier Cru Les Genevrières 2018 scored 93, Meursault Premier Cru Les Charmes 2017 scored 93, and Volnay Premier Cru Sous la Chapelle 2018 scored 92 by the Wine Advocate.
Robert Parker comments on Meursault Premier Cru Les Genevrières 2018: “The 2018 Meursault 1er Cru Les Genevrières is showing very well, unwinding in the glass to reveal aromas of pear, waxy citrus rind, wheat toast and honeycomb. Medium to full-bodied, satiny and layered, it's the most complete as well as the most concentrated of these 2018s, with racy acids and fine depth at the core”.
History
At present, Domaine Chavy-Chouet is run by the 7th generation winemaker - Romaric Chavy, who took over his father Hubert Chavy.
Hubert Chavy and his father Albert Chavy both married girls from the Ropiteau and the Chouet families from Meursault, which gave Domaine Chavy-Chouet the holdings in the two villages and 14 appellations.
Approach
The vineyards of Domaine Chavy-Chouet are plowed but are not farmed organically.
The production of whites: the grapes are pressed, and settled for 18 to 24 hours before the fermentation. The wines are matured in barrels with 10 percent of new wood. The lees are not stirred before the racking. The wines are bottled after the next harvest.
According to the reds, in 2019 the Bourgogne Rouge La Taupe and Pommard Chanlins were destemmed, in the meantime the rather riper Volnay Sous la Chapelle was entirely bunched.
