Unwinding in the glass with notes of pear, freshly baked bread, clear honey, white flowers and crisp stone fruit, it's full-bodied, ample and satiny, with a deep and layered mid-palate, prodigious levels of concentration and a racy spine of acidity that animates the long, penetrating finish. In the past, Ente's old-vine communal Meursault bottlings, above all his Sève du Clos, have tended to dominate the range, but in 2019 it's the Goutte d'Or, from a parcel planted in 1990, that stands out not only as the pinnacle of the portfolio but also as the best young wine I've ever tasted at this address. It will be worth a special effort to seek out."

History

The current winemaker of Domaine Arnaud Ente is Arnaud Ente.

The domaine itself was established in 1992 by Arnaud's family, originally from the north of France. His father married the daughter of Puligny vigneron, Camille David. Arnaud Ente was born in 1966. While working at the legendary Coche Dury, Arnaud Ente married Marie-Odile Thévenot in 1991. In 1992 they started farming vineyards in Meursault, rented from his father-in-law, vigneron Phillipe Thévenot.

Domaine Arnaud Ente farms the vineyard according to a biodynamic approach but with without certification. Arnaud Ente also uses organic principles, with certification since 2014.

Arnaud Ente uses a small, caterpillar-tracked chéniard to hedge, replace dead vines, apply compost, etc. Vineyards that were once immaculately cultivated now carry a green cover crop.

The domaine's most extensive holdings are in En L'Ormeau, located below the town centre of Meursault, which possesses a deep, rich clay soil. They separate their vines here into three batches, Meursault AOC, "Clos des Ambres," and "La Sève du Clos," based on the age of the vines and their relative position within the vineyard. Their holdings also feature parcels in the premier crus Meursault La Goutte d'Or and Puligny-Montrachet Les Referts and a small parcel in the enviably-positioned lieu-dit Les Petits Charrons on the slope just above the village. The domaine has some modest holdings in Volnay with Pinot Noir.

All grapes are harvested manually. The white grapes are usually crushed, though not always, before pressing. The must is left to settle for 24 hours, then the clear juice and fine lees are put in barrel for 11 months ageing before being racked into the tank for a further six months maturation. All wines are aged for twelve months in barrel and six months in stainless steel with a maximum of 20 percent of new oak for all wines. They are bottled without fining or filtration.
