The palate is fresh and crisp with a slight bitterness towards the tensile finish. Like the Referts from Bachelet-Monnot, there is impressive intensity and puissance here, the finish long and sustained in the mouth. This is a superb wine from Fichet."

History
Jean-Philippe Fichet is the winemaker of Domaine Jean-Philippe Fichet, and has always been close to the vineyards. He is the third-generation winemaker in his family.
In 1981, Jean-Philippe Fichet created his own vineyard. He produced his first vintage at only 20 years old. He bought the buildings at "Vieux Saint Christophe" in 1984, which let Jean-Philippe Fichet bottle the wines himself at his own cellar.
In 2000 he bought an old coaching inn at "le Creux du Coche". 2001 was a very intensive year, when not only the new winery was ready for moving in, but also some estate renovations finished.
Jean-Philippe Fichet founded the limited-liability company SARL Jean-Philippe Fichet in 2002.
In 2006 Jean-Philippe set up his own compost-making facility with the aim to control the quality of his soil.
Approach
Organic
At present, Domaine Jean-Philippe Fichet follows organic principles but without certification. A green harvest is done depending on a load of each vine and the year. The soil at the vineyards is ploughed, and the estate has produced its own compost for fifteen years now.
The harvest is hand-picked when the grapes are at the best maturity. After that, the bunches are pressed with a pneumatic press. Then, the juice is kept for 10 to 12 hours in a tank to get the juice sediment. Next, the clarified must is put into oak barrels, where fermentation takes place.
The wine will be kept in barrels for 11 months before being put in vats for at least the next six months. In order to save the wine’s freshness. The wine in vats is placed in a second cellar where the temperature drops to around 5℃. In case fining is needed, the wine is filtered through Kieselguhr (diatomaceous earth).
The wine is bottled in the estate with their own equipment. That ensures both quality work and flexibility. The corks for bottling are chosen with the utmost attention.
