Domaine du Pavillon
Domaine du Pavillon is situated in the south of Pommard, in the Côte de Beaune, Burgundy. The vineyards of the domaine cover 15 hectares, including a 4-hectares monopole Pommard Clos des Ursulines. The chief oenologist of the domaine is Christophe Chauvel, who farms the vineyards of the domaine according to organic certification, obtained in 2018.
The wines of the domaine are elegant, well-balanced and perfectly express the richness of the terroirs.
The top wines of the domaine are: Corton Clos des Maréchaudes Grand Cru and Meursault Premier Cru Les Charmes. The Corton Clos des Maréchaudes Grand Cru 2010 scored 93 and the Meursault Premier Cru Les Charmes 2011 scored 92 by the Wine Advocate.
Robert Parker’s tasting notes on the Corton Clos des Maréchaudes Grand Cru 2010: “The 2010 Corton Grand Cru Clos des Maréchaudes has a beautiful, almost haunting bouquet with delineated scents of cranberry, small red cherries and wild strawberry that are immediately seductive. The palate is medium-bodied with good fruit concentration on the entry: cranberry, strawberry and a dash of spice – even a sprinkle of cracked black pepper. It does not quite have the length and persistence I am looking for, but that should not detract from what is a superb Corton from the Bichot team. Drink 2015-2028+”.
History
The winemaking of Domaine du Pavillon is managed by Christophe Chauvel. The domaine is owned by Domaines Albert Bichot company.
In 2016 the domaine’s winery was modernized.
The domaine is known for its monopole Pommard Clos des Ursulines, which is the only walled vineyard in the Côte de Beaune that is classified both as a Premier and Grand Cru. The wall surrounds vineyards, a winery, a cellar, and an 18th-century manor.
Approach
Certified organic since 2018
Domaine du Pavillon’s vineyards are certified organically, with the certification obtained in 2018.
All the labour in the vineyards is done by hand. Only organic fertilisers are used.
Christophe Chauvel, as winemaker in charge, follows the policy of low intervention during vinification.
Corton Clos des Maréchaudes Grand Cru is vinified in temperature-controlled conical oak vats from 20 to 28 days. Maturation is done totally in oak barrels, with about 40 to 50 percent of new wood and lasts from 14 to 18 months.
For the Meursault Premier Cru Les Charmes the vatting time may last from 2 weeks to 3 months in oak barrels with 60 percent new oak. Ageing is done in oak barrels from 12 to 15 months, using 25 percent of new wood.
