Approach
Biodynamic without certification
Maison Champy is farmed according to the biodynamic principles with no certification.
Dimitri Bazas, in his production of white wines, prefers the grapes to be whole-bunch pressed and stirred. According to the making of red wines, Dimitri Bazas begins its fermentation with cool pre-maceration and finishes within a few days at 32℃.
The wines are matured in wooden barrels. Dimitri Bazas uses Allier and Vosges wood for the barrels for white wines, and Allier and Tronçais - for red.
