Domaine Hubert Lamy

Domaine Hubert Lamy is one of the greatest appeals of Saint-Aubin, Burgundy. The estate covers 16.5 hectares of vineyards within 20 appellations: 80 percent of the vines are Chardonnay, only 20 are Pinot Noir. The viticulture of the domaine is cultivated according to organic principles but without having been certified yet.

The winemaker in charge is Olivier Lamy. His wines are brilliant, deep, and concentrated.

Top wines of the domaine are Criots-Bâtard-Montrachet Grand Cru Haute Densité, Saint-Aubin Premier Cru Derrière Chez Edouard Haute Densité and Saint-Aubin Premier Cru Les Murgers des Dents de Chien. The Criots-Bâtard-Montrachet Grand Cru Haute Densité 2019 scored 100, Saint-Aubin Premier Cru Derrière Chez Edouard Haute Densité 2019 scored 97 and Saint-Aubin Premier Cru Les Murgers des Dents de Chien 2017 scored 94+ by the Wine Advocate.

Robert Parker commented on Criots-Bâtard-Montrachet Grand Cru Haute Densité 2019: “Revisited in bottle, Lamy's 2019 Criots-Bâtard-Montrachet Grand Cru Haute Densité has turned out even better than I predicted. Unfurling in the glass with aromas of orange oil, pear, freshly baked bread, beeswax, dried white flowers and stone fruit pits, this profound white Burgundy is full-bodied, deep and multidimensional, with prodigious reserves of concentration and chalky structuring extract, racy acids and a long, resonant finish. History

1973

Olivier Lamy joined Domaine Hubert Lamy in 1995. The Lamy family has been working with vines since 1640.

In 1973 Hubert Lamy founded Domaine Hubert Lamy. Before then, Hubert Lamy was working with his father, Jean Lamy, at the 8-hectares domaine with vineyards planted mostly in regional appellations.

The 1990s turned up as the big stage of growth for the domaine: new vines were bought, planted, and some parcels planted with Pinot Noir were changed to Chardonnay. Olivier Lamy strongly believes that for clay-limestone soils, on which vineyards of the domaine are situated, Chardonnay is an excellent decision.

In 2012 some vineyards from Vincent Girardin were purchased: Chassagne-Montrachet Premier Cru Les Chaumées, Santenay Clos des Graviéres and some more Saint-Aubin Les Frionnes.

Approach

Organic

The vineyards of Domaine Hubert Lamy are farmed according to organic principles without having been certified yet. For treatments, only products approved in organic farming are used. A tremendous amount of work and care is carried out during the year. The pruning is conveyed from November to March; the "Guyot Poussard" method is applied. The plots are ploughed with a tractor or winch. In May, to reduce the number of grapes on the vines, disbudding is conducted. In addition, the vines are trellised - cropped very high or braided for the bunches to be aired. The harvesting is done manually, the grapes are collected in tubs or small crates.

Upon arrival at the winery the white grapes are pressed, and the juice is settled for one night in stainless steel vats. After that, the clear juice is transferred by gravity into the barrels.

The red grapes are sorted on a vibrating table, destemmed and moved to cement vats. The alcoholic fermentation launches in the next 3 to 10 days and is followed by devatting and pressing. After that, the wine is set for one night and transferred into the barrels for maturation. After 18 months of ageing, the bottling is carried out.
