About
Weingut Dr. Corvers-Kauter
Weingut Dr. Corvers-Kauter is in Oestrich-Winkel, Rheingau. Dr. Matthias Corvers and Brigitte Corvers are the co-owners, who cultivate the 31 hectares of vineyards according to organic principles. The winery is a member of Bioland and Slow Food.
The winery's top wines are Riesling TBA Oestricher Doosberg, Spätburgunder Aßmannhausen Höllenberg, and Riesling Auslese Oestrich Doosberg.
The wines produced at Weingut Dr. Corvers-Kauter are of great finesse and striking freshness that do not tend towards opulence.
Riesling TBA Oestricher Doosberg 2020 scored 95, Spätburgunder Aßmannhausen Höllenberg 2019 scored 93, Riesling Auslese Oestrich Doosberg 2020 scored 93 by Gerhard Eichelmann.
Gerhard Eichelmann notes, “[...] the Spätburgunder of Weingut Dr. Corvers-Kauter has become more refined and nuanced and is now among the best in the Rheingau and Germany. [...] The Doosberg is much richer and lusher, characterised by sage and orange peel. [...] the TBA has more acidity after aeration, is powerful, eternally long, and, thanks to the very subtle botrytis aroma, is perfectly balanced. [...] the Höllenberg is significantly more powerful and has subtle tart tannin tones and smoky graphite notes. [...] the sweet wines are also convincing across the board. [...] the Auslese from the Doosberg is filigree and light at first, has acidity, but becomes firmer and more complex with aeration.”

Approach
Organic
Weingut Dr. Corvers-Kauter vineyards are cultivated according to organic principles since 2013. Today, the winery is a member of Bioland and Slow Food.
The best vineyards are located in Rüdesheimer Berg, Rüdesheimer Rottland, Rüdesheimer Roseneck, and Rüdesheimer Schlossberg; Aßmannshausen Höllenberg, Oestricher Doosberg and Oestricher Lenchen. In 2018, the Corvers merged the following vineyards with the winery holdings: Hattenheimer Nussbrunnen, Erbacher Marcobrunn and Rauenthaler Baiken. Previously they belonged to Langwerth von Simmern.
The parcels are planted with just two grape varieties - Riesling (85 percent) and Spätburgunder (15 percent).
The white grapes are pressed with a basket press in the cellar and slowly fermented. They are kept on the yeast for a long time. The white wines are produced partly in steel vats. The part of single-site wines is aged in large wooden barrels. Spätburgunders mature in barriques.
