Domaine Barat

Domaine Barat is a family estate in Chablis, Burgundy. Angèle Barat is the winemaker of the domaine. She works on 22 hectares of vineyards.

Angèle Barat wines style is beautiful shiny gold-green reflections, it is characterized by a floral nose, a lively and iodized mouth with a beautiful persistence.

The top wine of Domaine Barat is Chablis Vaillons. Chablis Vaillons 1996 scored 91 by the Wine Advocate.

Robert Parker comments on the Chablis Vaillons 1996: “The Chablis Vaillons exhibits stony, crispy, flinty aromas and a well-focused, medium-to-full-bodied personality with steel, metallic, floral, lemon, and chalk flavors. It should be at its best after 3 to 4 years of cellaring and will maintain its peak well past 2005”.

History

Today the wines of Domaine Barat are made by the 6th winemaker generation - Angèle Barat. In 2012 she and her brother Ludovic Barat, responsible for vineyards, succeeded their father - Michel Barat.

The domaine also holds some vines in Fleys.

Approach

The grapes are harvested by machine.

Before the alcoholic fermentation, the must is decanted for 12 to 24 hours. The alcoholic fermentation precedes the malolactic fermentation and is carried out on the lees in vats. The temperature is regulated at 18°C.

The juice is vinified in stainless steel, as Angèle Barat does not prefer the barrels because they mask the terroir.

In January, the wines are racked and clarified. The bottling process is carried out from May to June, which ensures marketing at the end of the year.
