Domaine Jean Collet
Domaine Jean Collet is a 40 hectares large domaine located in Chablis, Burgundy. The vineyards are farmed by Romain Collet, the winemaker, according to organic and sustainable principles. The domaine is certified organic.
Romain Collet's style can be described as fleshy and textural. Some vintages have acidity and tension despite the warmth of the harvest.
The three top wines of the domaine are: Chablis Grand Cru Valmur, Chablis Grand Cru Les Clos, and Chablis Premier Cru Mont de Milieu.
The Chablis Grand Cru Valmur 1989 scored 95, the Chablis Grand Cru Les Clos 2017 scored 94, and the Chablis Premier Cru Mont de Milieu scored 93+ by the Wine Advocate.
Robert Parker’s tasting notes on Chablis Grand Cru Valmur 1989: "Collet's 1989 Chablis-Valmur is the quintessential example of a profound Chablis. It displays that unmistakable mineral, flinty, smoky smell, backed up by fabulously concentrated, high extract flavours buttressed by zinging amounts of acidity. The finish is a blockbuster. But keep in mind, this wine is still an infant in terms of development. Drink it over the next 10-12 years.
Collet is probably the least known of the top Chablis producers. Most of his wines are sold to France's greatest restaurants, making the tiny quantities that reach America's shores almost impossible to find. I only tasted two of his offerings from the 1989 vintage."
History
Jean Collet, son of Marius Collet and Agnès Collet, began bottling the wine from Domaine Jean Collet in 1954. He started selling wines from Chablis not only in France but also abroad. His wife, Janine Costal, was from the vignerons, who have been into wine since 1792.
After obtaining a diploma from Beaune wine school, Jean Collet's son, Gilles Collet, joined his father in 1979. Jean Collet's grandson, Romain Collet, took over the domaine in 2008 and, since that time, has constantly been improving it.

Domaine Jean Collet is currently farmed according to organic and sustainable principles. The domaine was certified organic in 2018.
The winemaker farms the vineyards with much care and dedication to the terroir, with as little mechanical intervention. The tillage lets the root system take most of the soil.
There are also some old vines in the vineyards, planted in 1932. They reflect the local terroir and let the wines express themselves.
