Domaine du Colombier is a family-owned domaine, located near Chablis, in the town of Fontenay-Près-Chablis, Burgundy. Vincent Mothe manages 55 hectares of vineyards while Thierry Mothe and Marion Mothe are responsible for the winemaking.

Thierry Mothe and Marion Mothe’s wine style is known for dry, limpid, lively and light white wines, with a characteristic color and subtle white-green reflections.

The top wines of the domaine are: Petit Chablis, Chablis Grand Cru Bougros, and Chablis Premier Cru Vaucoupin. On CellarTracker the Petit Chablis 2016 scored 93, Chablis Grand Cru Bougros 2008 scored 93, and the Chablis Premier Cru Vaucoupin 2017 scored 91.

Thierry Mothe and Marion Mothe are managing the domaine along with their brothers, Jean-Louis Mothe and Vincent Mothe. Domaine du Colombier has been a family property since 1887, passed through several generations. In 1957 Guy Mothe took over the vinification processes. It was the 1980s when the estate began bottling its wines.

Vincent Mothe, brother of Marion Mothe and Thierry Mothe, are responsible for the vineyards, while Thierry Mothe and Marion Mothe are responsible for the winemaking at Domaine du Colombier.

In wintertime, pruning is done according to the Guyot approach. During spring the vines are bent and hooked. In early summer the new vine branches are placed in the right position in order to get the best of the harvest in the future. The branches are slightly trimmed in July with the help of a tractor.

​When the fruits reach the desired maturity, mechanical harvesting takes place. At the estate, the fruits are squeezed by a pneumatic press. The juice is taken into stainless steel tanks, which are thermo-regulated. The alcoholic fermentation lasts over two weeks at a temperature between 15°C and 18°C. Then, during malolactic fermentation, the wine is deacidified and stabilized. The wine is aged in vats and oak barrels. Oak barrels are used for grands crus.
