Tasting the Chablis Premier Cru Vaillons Vieilles Vignes 2007, Robert Parker said: “Sebastien Dauvissat’s 2007 Chablis Vaillons Vieilles Vignes, as usual, comes from vines in the cru Chatains (which, he says, lends it citricity and vivacity) as well as the neighbouring core Vaillons; and as usual received an entirely different treatment from its fellow premier crus: vinified in barrel, it was then rapidly removed to the tank. As usual, too, it is the best-of-show. Citrus zest, holly berry, caraway, and buddleia scent the strikingly high-toned, penetrating nose. Lemon and grapefruit; herbed chicken stock; and pungently bitter-sweet floral notes mingle in a rich, refreshing, and positively shimmering interplay with saline, savoury, chalky mineral elements on a creamily-textured palate. This mouth-coating elixir leaves behind a subtly bitter, intriguingly mineral, hauntingly floral and refreshingly citric finish. It should reward a decade or more of cellaring, based on an excellent track record.”
History
The winemaker of Caves Jean & Sébastien Dauvissat is Sébastien Dauvissat.
The estate has belonged to the Dauvissats since the 19th century. The cellars are located in the 17th-century house and were enlarged in the 1980s.
The 1963 vintage, bottled under the domaine’s label, is considered the first one.
Today Sébastien Dauvissat took over his father’s domaine, Jean Dauvissat, and now makes wine along with his wife, Evelyne Dauvissat.
Approach
Caves Jean & Sébastien Dauvissat’s vineyards are cultivated with the greatest respect for the terroirs.
The parcels have some old vines that are up to forty years old, and some of them are even seventy years old. The oldest ones are used for Vieilles Vignes. The harvest across the vineyards differs according to the age of the vines. Chardonnay is the only kind of grape allowed on the steep slopes of the Serein Valley.
All the vineyards are located on Kimmeridgian limestone, which makes Chablis one of the unique wine areas in the world.
Fermentation and ageing of the wines take place in stainless steel vats. The old vines of Vaillons and the Les Preuses are partially fermented and aged in oak barrels. About 25 percent of new wood is applied. The 17th-century cellars have an average temperature from 10°C to 15°C throughout the year. The wines are traditionally bottled after 18 to 24 months of ageing.
