History
The winemaker at Domaine Jean Dauvissat & Fils is Fabien Dauvissat, managing it since 2009.
The domaine was started by Fabien Dauvissat's great-grandfather, Alphonse Dauvissat, in La Chapelle Vaupelteigne and developed by his son Jean Dauvissat. Jean Dauvissat married a girl from Milly, and she began to develop domaine bottling. Their son Philippe Dauvissat preferred selling in bulk, but Fabien Dauvissat has reversed that trend since he arrived at the domaine in 2009.

Domaine Jean Dauvissat & Fils has been farmed according to a biodynamic principle since 2018 and according to the organic approach since 2014. The winemaker practices reasonable yields, targeted pruning, a controlled de-budding and organic fertilization. Fabien Dauvissat doesn't use weed killers or insecticides since 2011.
The fruits are harvested at their best maturity. The 6 hectares of older vines are hand-harvested.
The grapes are destemmed in the winery. Fermentation takes place using natural yeast—the wine ages for one or two years. Fabien Dauvissat only inputs sulphur, bentonite, and isinglass to elaborate wine. In order to avoid a tartar deposit, natural wood cellulose is added. The wines are then lightly filtered with kieselgur, a silica rock.
Fabien Dauvissat's wines are fermented and matured in stainless steel, apart from two cuvées which see oak, and are bottled after one year for village Chablis or 18 months for the crus.
