Domaine Nathalie & Gilles Fèvre is an old domaine situated in the heart of Chablis' vineyard, Burgundy. The domaine holds 50 hectares of vines. Julie Fèvre, Nathalie Fèvre and Gilles Fèvre the winemakers, converted all their vineyards to organic in 2021, as they have been already certified sustainable by HVE level 3 since 2015.
The wines of the domaine are precise, elegant and distinguished by their generous aromas.
Top wines of the domaine are: Chablis Grand Cru les Preuses, Chablis Premier Cru Fourchaume, Chablis Premier Cru Vaulorent. The Chablis Grand Cru les Preuses 2015 scored 92, the Chablis Premier Cru Fourchaume 2014 scored 91 and the Chablis Premier Cru Vaulorent 2014 scored 91 by the Wine Advocate.
Robert Parker’s tasting notes on the Chablis Grand Cru les Preuses: “The 2015 Chablis Grand Cru les Preuses comes from 2.3 hectares of 50-year-old vines and is aged in oak barrels for 18 months. It has a lifted bouquet, with granite and smoke aromas filtering through the light tropical scents. The palate is well balanced with a fine thread of acidity, tightly packed with spicy, hazelnut-tinged citrus fruit with a feisty and thoroughly enjoyable finish. No, not a profound Les Preuses, but this is a satisfying grand cru.”
History
Since the 2016 vintage Julie Fèvre has joined family winemaking in Domaine Nathalie & Gilles Fèvre. Her parents Nathalie Févre and Gilles Févre has been managing the winemaking in the domaine since 2004.
The origins of the domaine are connected with Fèvre family and go back to the 18th century, as Fèvres has been always working in the vineyards. But the estate started to expand only at the beginning of the 20th century when Nathalie Fèvres’s great-grandfather Marcel Fèvres predicted the success of Chablis. His son Bernard Fèvre had expanded the domaine by purchasing the lands of Chablis Grand Cru Les Preuses and Chablis Premier Cru Fourchaume. His son, Nathalie Fèvres’s father - Jacques Fèvres continued this practice and purchased lands of Chablis, as well as plantations on plots formerly destroyed by phylloxera.

Approach
Organic since 2021 without certification, Certified sustainable level 3 by HVE since 2015
Domaine Nathalie & Gilles Fèvre has been converted to organic in 2021 and has obtained sustainable certification by HVE level 3 since 2015.
Vineyards are cultivated in respect to soils and vines, using environmentally friendly techniques. Harvesting is made by machine for younger vines and by hand for old vines and the top cuvées. Yields are restricted to enhance the class and the concentration of the wines. Vinification is carried in stainless steel after a rather extensive settling. Vinification of Grand Cru Les Preuses and Premiers Crus Vaulorent and Mont de Milieu, is performed in oak barrels.
Early bottling is preferred in this domaine.
