Domaine Fourrey & Fils
Domaine Fourrey & Fils is a family estate located in Milly, Burgundy. The vineyards of the domaine cover 20 hectares in 11 different appellations. Marie-José farms the vineyards following the sustainable principles with HVE certificate.
The wines of the domaine have matured, balanced and concentrated flavors.
The top wine of the domaine is the Chablis Premier Cru Mont de Milieu, the 2014 vintage scored 91 by the Wine Advocate.
Robert Parker’s tasting notes on the Chablis Premier Cru Mont de Milieu 2014: “The 2014 Chablis Premier Cru Mont de Milieu has a perfumed, quite floral bouquet with white flower scents merging with citrus fruit and Granny Smith apples. The palate is crisp and fresh with fine acidity, a little tight and linear, but delivering satisfying tension and mineralité on the finish. This is worth checking out. It is a very well-crafted Mont de Milieu.”
History
Domaine Fourrey & Fils has been farmed by Marie-José Fourrey, who is the fourth generation of winemakers in the Fourrey family. She succeeded her brother Jean-Luc Fourrey, who took charge in 1992.
Approach
Certified sustainable by HVE
The vineyards of the Domaine Fourrey & Fils are cultivated according to sustainable principles with HVE certification. Soils are ploughed, usage of fertilizers and herbicides is restricted, the grapes are harvested mechanically.
Two types of pressing are applied: mechanical and pneumatic. After the pressing, the juice goes down into vats for settling for between 18 and 24 hours after filling. The quantity of sugars in the must is measured with a mustmeter. The yeasts convert the sugars into alcohol.
Fermentation is done under temperature control with a maximum 19°C to 20°C. After the fermentation, the wines are cooled to around 10°C, and then their temperature is increased to 20°C in order to start malolactic fermentation. Clarification is done naturally. Two rackings are conducted, during the first racking CO2 is removed. Fine lees are added before the maturation which lasts 6 months. The vinification and maturation are done in stainless steel. The wines are fined and filtered before bottling.
