Unfurling in the glass with scents of citrus oil, green apple and iodine and framed by a deft touch of smoky reduction, it's full-bodied, deep and broad-shouldered, with immense concentration, a multidimensional but tight-knit core, racy underlying acids and a long, searingly mineral finish. This will demand some patience, but it will be worth it”.

History

Domaine Louis Michel & Fils was managed by Jean-Loup Michel, who succeeded his father - Louis Michel. In 2007 Louis Michel’s nephew - Guillaume Gicqueau-Michel, left Paris for Chablis and family estate, until present days he is in charge of the domaine.

The roots of the domaine date back to the 19th century.

Approach

Domaine Louis Michel & Fils harvest is picked by machine, and sorted by hand. Guillaume Gicqueau-Michel prefers to pick late harvest, and to press it quickly. Such an approach requires three separate presses. Since 2008 the fermentation has been carried out with indigenous yeasts. The period of wines’ maturation depends on the cuvée, in particular the premier crus is bottled before the next harvest, while the grands crus after later, after 18 months.
