Domaine Alice & Olivier de Moor
Domaine Alice & Olivier de Moor is a small estate located in Courgis, a small village 7km southwest of Chablis, Burgundy. Today the 9 hectares of vineyards are farmed by current winemakers Alice and Olivier de Moor. In 2008 the domaine was certified organic.
Top wines of Domaine Alice & Olivier de Moor are: Chablis Cuvée Bel Air et Clardy, Chablis Cuvée Coteaux de Rosette, and Chablis Butteaux Premier Cru. The Chablis Bel Air et Clardy 2009 scored 94, the Chablis Côte Aux de Rosette 2011 scored 93, and the Chablis Butteaux Premier Cru 2009 scored 89+ by the Wine Advocate.
Robert Parker’s tasting notes on the Chablis Bel Air et Clardy 2009 are: “The 2009 Chablis Bel Air et Clardy emerges from the glass with exotic scents of tangerines, apricots and yellow peaches. Mineral notes follow on the mid-palate, giving the wine an undeniably attractive shape and proportion that follow through to the finish. This is a big, dramatic wine that deftly balances overt fruit with insistent, driving minerality. I loved it. Anticipated maturity: 2013-2019’.
History

At present, the wines of Domaine Alice & Olivier de Moor are produced by Alice and Olivier de Moor.
The roots of the domaine go back to 1989, when Olivier de Moor started to plant the vines along with his uncle. In 5 years Alice and Olivier de Moor started to work on the domaine. In 1995 they represented their first vintage made from 3 hectares of Chablis and some Burgundy in Chitry vineyards.
The cellar of the domaine was purchased after the death of Olivier de Moor’s mother.
Since 2007 the cellar of the domaine has been greatly developed, especially, the de Moors built a large and high-ceilinged winery, allowing them to do all their cellar work by gravity, and bought a second-hand pneumatic press to treat the grapes in the gentlest way possible.
In 2017 Domaine Alice & Olivier de Moor was extended with two plots of premier cru vineyards, in particular Vau de Vey and Mont de Milieu.
Approach
Certified organic since 2008
Domaine Alice & Olivier de Moor has been farmed according to organic principles since 2005 and received its certificate in 2008.
In order not to damage the fruits, the harvested grapes have been picked into the small boxes since 2002.
The wines of the domaine are vinified separately, with no sulphur. The fermentation and ageing are done into barrels, in particular, Alice de Moor prefers Austrian wood.
Maturation is carried in Burgundian barrels of different ages for the Chablis wines, the Bourgogne Chitry and the old vine Aligoté, with young vine wines and Sauvignon matures in cement and stainless steel tanks.
On Burgundy Report Alice de Moor tells about the packaging process: “And I really like the packaging here, nice labels and the bottles topped with a narrow band of yellow wax”.
