Robert Parker’s tasting notes on the Fixin Les Crais de Chêne Cuvée Vieilles Vignes 2009 are: “The 2009 Fixin Les Crais de Chêne Cuvée Vieilles Vignes is a dark, concentrated wine loaded with dark fruit. Intense, yet marvelously soft and engaging, the Crais de Chene possesses dazzling brilliance and great length. Frankly, this is an absolutely delicious bottle of wine. Anticipated maturity: 2012-2022”.

History

Since 2013 Domaine Collotte has been managed by the 2nd generation - Isabelle Collotte. She came to the estate directly from wine school, and initially was working along with her father and founder of the domaine - Phillipe Collotte.

Isabelle Collotte produces both red and white wines. The whites are from Champforey, which is close to Marsannay village, with vines from 30 to 60 years old. The reds are also made from vineyards in Marsannay: Les Champs Salomon, En Combereau, Les Boivins, Le Clos de Jeu and Les Grasses Têtes.

Approach

The red grapes are completely destemmed and given a cold pre-fermentation maceration.

The reds are vinified 50 percent in tank, and 50 percent in barrel, whereas the whites - 100 percent in barrel. Isabelle Collotte does not prefer too much tannin in wine, so she avoids too much new wood.
