Unwinding in the glass with a complex bouquet of cherries, cassis and wild berries mingled with hints of black truffle, rose petals and warm spices, it's medium to full-bodied, deep and concentrated, its chassis of ripe, powdery tannin entirely concealed by an ample core of fruit. Seamless and complete, it concludes with a long, expansive finish."
History
The present winemaker at Domaine Louis Boillot is Clément Boillot.
Louis Boillot, from the Volnay family of Boillots’ came to Chambolle-Musigny. He was formerly associated with his brother and father at Domaine Lucien Boillot, but established his own domaine since 2003. Since 2019 his son Clément Boillot has taken charge of Domaine Louis Boillot.
Approach
Sustainable
The vineyards of Domaine Louis Boillot are farmed according to a sustainable approach, though, without being certified as such yet.
The vineyards are ploughed, and the grapes are sorted in the vineyard, fully destemmed, given a cool pre-fermentation maceration, fermented, then sent to a barrel once the juice is cool again. Clément Boillot uses 20 to 30 of new wood in the cellar. Maturation varies from 16 to 18 months before the wines are bottled without fining or filtration.
The Boillot domaine may suffer from the lack of geographical cohesion of its vineyard holdings, especially in contrast to his partner's, Ghislaine Barthod's concentration on Chambolle-Musigny.
The Pommard Premier Cru Croix Noires is made from the grapes gathered from 80-year-old vines. The fruit for this wine grows on thick clay soil and the now-centenarian Gevrey-Chambertin Premier Cru Cherbaudes, a seductive Gevrey-Chambertin, with the fruit revoking the tannins from this village.
