Domaine François Carillon
Domaine François Carillon is located in Puligny-Montrachet, Burgundy. The 6.5 hectares of domaine’s vineyards are spread over 16 different appellations, within the villages of Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin. François Carillon farms the vineyards following the sustainable approach, without certification.
The wines of the domaine are elegant and fruity gourmet wines, which represent the exceptional terroirs they were grown on.
The top wines of the domaine are: Chevalier-Montrachet Grand Cru, Bienvenues-Bâtard-Montrachet Grand Cru and Puligny-Montrachet Premier Cru Les Perrières. The Chevalier-Montrachet Grand Cru 2013 scored 95-97, the Bienvenues-Bâtard-Montrachet Grand Cru 2009 scored 94 and the Puligny-Montrachet Premier Cru Les Perrières 2017 scored 92-94+ by the Wine Advocate.
Robert Parker’s tasting notes on the Chevalier-Montrachet Grand Cru 2013: “The 2013 Chevalier-Montrachet Grand Cru, which comes from 0.406-hectares of about 42-year-old vines, is an “absolute killer” (not a technical term, but you know what I mean.) It has showstopping intensity on the nose with mineral-infused citrus fruit – a bouquet determined to put a gap between it and the premier crus. The palate is extremely well balanced, with an almost Oriental-like ripeness (Japanese yuzu perhaps?) This is an extravagant Chevalier-Montrachet – beautifully balanced with a really long, marmalade-tinged finish that is utterly glorious.”
History

Domaine François Carillon is named after its current winemaker and the founder - François Carillon. He is the fifteenth winegrowing generation in Carillon family. Since 1998 François Carillon has worked for the family domaine - Domaine Louis Carillon & Fils alongside his father Louis Carillon and brother Jacques Carillon. But in 2010 the domaine was split between two brothers into Domaine François Carillon and Domaine Jacques Carillon.
Domaine François Carillon’s vineyards consist of a share of the family vineyards and holdings, obtained from the former Domaine Maroslavac.
The label of the domaine, which is currently in use, was found on an engraved stone in a cave of the village, dated 1611. According to historical sources, François Carillon’s ancestor Jehan Carillon was already a winemaker in 1520.
Approach
Sustainable
The vineyards of the Domaine François Carillon are farmed according to sustainable principles, though without certification.
The vineyards are ploughed either by horse or by the tractor. No herbicides are used. Only natural fertilizers are used when needed. The vine shoots are not burned but processed into chips, composted and spread in the vineyards.
The harvesting is done by hand.
Soft pneumatic pressing is done before alcoholic and malolactic fermentations in oak barrels. The percentage of new oak varies from 10 to 15 percent. Maturation on lees continues for 12 months; stirring occurs occasionally. Before the bottling, the wines spend 9 months in stainless steel vats.
Ardea Seal stoppers are used for corking Bourgogne Chardonnays.
