Robert Parker’s tasting notes on the Bienvenues-Bâtard-Montrachet Grand Cru 2014: “Tasted blind at the annual Burgfest tasting, the 2014 Bienvenues-Bâtard-Montrachet Grand Cru from Jacques Carillon demonstrated a little more oak on the nose compared to the other three alongside. However, it is neatly sutured into the citrus fruit with hints of white peach emerging with time. The palate is well balanced with vibrant acidity and superb saline notes that really flourish toward the finish, not unlike some of the 2014 Les Caillerets tasted in a previous flight. This has immense potential. Très grand cru and très bienvenue.”
History
1520
Domaine Jacques Carillon is managed by Jacques Carillon, assisted by his wife Sylvia. Jacques Carillon is the 15th generation of Carillon winegrowers. The first mention is about Jehan Carillon, who had been a winemaker already in 1520.
Jacques Carillon started winemaking in 1980 at the family domaine - Domaine Louis Carillon & Fils alongside his father Louis Carillon, after completing his studies at the winemaking school in Beaune.
In 2010 Domaine Louis Carillon & Fils was split between Jacques Carillon and his younger brother François Carillon into Domaine François Carillon and Domaine Jacques Carillon.
Approach
Organic
Domaine Jacques Carillon is farmed organically, without certification. On the official site of the domaine Jacques Carillon, being a passionate winemaker, says about his vineyards: “When I am alone in my vineyards I listen, I observe. I have the feeling of being an integral part of a universe.”
The grapes are crushed before pressing. After being pressed, the settling from 12 to 18 hours is done. Alcoholic and malolactic fermentations are conducted in barrels.
Maturation lasts for 12 months in oak barrels, with new wood limited to 15 percent.
The bottling is done the following spring.
