Robert Parker’s tasting notes on the Chevalier-Montrachet Grand Cru 2012: “The 2012 Chevalier-Montrachet Grand Cru comes from an exchange of parcels (with Folatieres) that Alain has engaged in with another undisclosed grower, Alain receiving the Grand Cru in the form of pressed juice. It has a crisp, focused, mineral-driven bouquet with superb delineation. It is not overly complex or profound, but delivers very subtle, chalk and limestone aromas intertwined with the pure green apple and lime fruit. The palate is very well-balanced with a seductive entry: hints of greengage, red apple, pear and dried apricot with a saline note at the side of the mouth. This feels voluminous in the mouth, the pedigree of the terroir really coming through, offering tremendous weight and persistency on the finish. Long and tender, this Chevalier will be worth hunting down after bottling? even if there is just one barrel.”
History
Domaine Alain Chavy is managed by Alain Chavy, assisted by his son Corentin Chavy. Alain Chavy comes from a winemaking family. The Chavy family lives in the village of Puligny-Montrachet for over 200 years. But it was Alain Chavy’s father - Gérard Chavy, who started bottling at the domaine.
Alain Chavy and his brother Jean-Louis Chavy worked with their father Gérard Chavy from 1986 until his retirement in 1997. Then the brothers continued to work together until 2003 when they decided to equally divide Domaine Gérard Chavy. Most of the vineyards were split equally, but Alain Chavy kept the Pucelles vineyards and a bigger slice of Clavaillon, while Jean-Louis Chavy took all of the Perriéres vineyards.
Approach
Sustainable
Domaine Alain Chavy’s vineyards are farmed according to sustainable principles, without certification.
The soils have been ploughed manually since 2009, the harvesting is done by hand.
The grapes are crushed before being pressed. The fermentation process with inoculated yeasts follows after cooling and settling. A mix of 228- and 400-litre barrels are used during the fermentation. The percentage of new wood does not exceed 25 percent.
Racking is done before the following harvest. Fining is done in November, filtering is done in January and then bottling is carried out.
