Domaine Philippe Chavy has been managed by Philippe Chavy since 2002. He started to work alongside his father Albert Chavy in their family domaine. Almost all the domaine’s vineyards were planted by Albert Chavy in the 1950-s and another part of the vineyards came from Philippe Chavy’s mother - nee Ropiteau, which were planted in the 1930-s. Philippe Chavy is the cousin of Alain and Jean-Louis Chavy.

The Chavy family have been the winemakers of Puligny-Montrachet for over 200 years.

The vineyards of Domaine Philippe Chavy are farmed biodynamically, without certification.

The vines are old and the rows between them are narrow, but the ploughing is still done; no herbicides or insecticides are used. The harvesting is done by hand.

The cuvées are vinified separately but may be blended, depending on the wine style.

Since 2020 the wines have been vinified without sulphur. Neither crushing nor settling or subsequent lees stirring is done before pressing. The 2019 vintage was racked before the harvest and bottled from October. New oak does not exceed 50 percent. Philippe Chavy does bottling manually directly from the tank to the bottle, without any filtration or fining.
