History
1973
Since 2006 Domaine Bouard-Bonnefoy has been run by Fabrice Bouard and his wife - Carine Bonnefoy. The couple took over from Henri Bonnefoy - Carine Bonnefoy’s father.
In 2017 Clara - daughter of Fabrice Bouard and Carine Bonnefoy joined the family estate. She is educated in technical-commercial wine and spirits BTS at the Beaune viticulture school.
The roots of Domaine Bouard-Bonnefoy go back to Louis Maître, who inherited the vines and land from his parents Marie-Maria and Henri Maître. Louis Maître’s daughter, Suzanne, and her husband Pierre Bonnefoy expanded the farm by land purchases. Then Henri Bonnefoy, their son, husband of Chantal, set up on his own in 1973, starting with 1 hectare of vines, he gradually took over his parents' vines, bought other land bringing the estate to 5 hectares.
Approach
Sustainable
The Domaine Bouard-Bonnefoy’s vineyards are cultivated according to the sustainable concept without certificate. In order to produce quality wines and therefore inevitably quality grapes, Fabrice Bouard, who is a current winemaker, farms his plots with a great respect to nature. The soil is ploughed without herbicides.
The grapes are hand-harvested, lightly crushed, and pressed before the fermentation. The red grapes are 100 percent destemmed.
The maturation is carried out in oak barrels. Fabrice Bouard uses 4 years old barrels for white wines, and 6 years old for reds.
The wines are racked in summer and bottled before harvest.
