Since 1996 Sylvain Morey has been developing his own domaine - Bastide du Claux in the Luberon.
In 2014 when father’s estate - Domaine Jean-Marc Morey, located in Chassagne-Montrachet, was split and Sylvain Morey got 3 hectares.
Approach
The winemaker is Sylvain Morey, who prefers the grapes to be destemmed before the vinification. During fermentation the natural yeasts are added. The wines are matured for about 18 months. The percentage of new wood in barrels does not exceed 30 percent.
