Domaine Fernand & Laurent Pillot is a 14.8 hectares large domaine, located in Chassagne-Montrachet, Burgundy. Fernand Pillot and Laurent Pillot are winemakers in charge, they farm the vineyards according to certified sustainable principles. The domaine has been certified by the HVE and obtained level 3. The domaine has also been a DEPHY Ecophyto member since 2012.

Fernand Pillot and Laurent Pillot’s wines are very pure.

The three top wines of the domaine are: Chassagne-Montrachet Premier Cru Grandes Ruchottes, Pommard Premier Cru Rugiens, and Chassagne-Montrachet Premier Cru Vide Bourse.

The Chassagne-Montrachet Premier Cru Grandes Ruchottes 2020 scored 94+, the Pommard Premier Cru Rugiens 2020 scored 94+, and the Chassagne-Montrachet Premier Cru Vide Bourse 2020 scored 93+ by the Wine Advocate.

Robert Parker’s tasting notes on the Chassagne-Montrachet Premier Cru Grandes Ruchottes: “The 2020 Chassagne-Montrachet Premier Cru Grandes Ruchottes is also very promising, mingling aromas of pear and citrus zest with notions of almond paste, freshly baked bread, crushed mint and wet stones. Medium to full-bodied, ample and concentrated, it's rich but tightly wound, with racy acids, chalky structuring extract and a long, penetrating finish.”

History

The winemakers of Domaine Fernand & Laurent Pillot are Fernand Pillot and Laurent Pillot.

The history of the Pillots goes back to the 17th Century in Chassagne. Their ancestors worked in the vineyards and made barrels.

In the 19th century, the Pillots gave up making barrels and focused on the parcels in Chassagne-Montrachet. Fernand Pillot and his son Laurent Pillot, the fourth generation vignerons, managed to extend their vineyards in 1992 and 2001. Today the domaine has 22 appellations with plots in Chassagne-Montrachet and Pommard, and also in the terroirs of Santenay, Saint-Aubin, Puligny-Montrachet, Meursault, Volnay and Beaune.

A new cuverie was built in 1993 with storage rooms, and the new cellar is also well equipped letting the winemakers bottle their wines at the domaine.

Like their cousins at Domaine Jean-Marc Pillot, this branch of the family also moved production out of the village itself down to the light-industrial zone of Le Haut de Champ in 1994. Their holdings had been swelled by inheritance: Colin vineyards from Fernand’s wife's family and Pothier-Rieusset land from Laurent’s wife's family.

Approach

Certified sustainable level 3 by HVE, Certified DEPHY Ecophyto since 2012

The vineyards of Domaine Fernand & Laurent Pillot are farmed according to sustainable principles and have been certified sustainable by HVE, getting level 3. The domaine has also been a DEPHY Ecophyto member since 2012.

The parcels are equally divided between white and red vines and are farmed without chemical herbicides with much care for the soils.

The pinot grapes are usually destemmed, given a cool pre-maceration with a longer period after fermentation, to soften tannins. There is a daily pump-over, and punching down if needed according to tasting, but nowadays much less than before. Tonnellerie Billon barrels are currently used at the domaine.

Fernand Pillot and Laurent Pillot’s whites are vinified and matured with the use of 20 percent of new wood for village wines, and 25 percent for premiers crus.

The wines are bottled with DIAM corks. Though it may depend on the vintage.
