Approach

Sustainable

Domaine Edmond Monnot & Fils vineyards are farmed according to a sustainable approach but aren’t certified as such yet.

The vines are pruned on the cordon royat system. The harvesting is done manually. The grapes are destemmed. The wine ages 12 months in barrels. Stéphane Monnot uses up to 30 percent of new wood for his vintages. However, not all of the cuvées see the new oak. The wine spends another 6 months in tanks before bottling.
