History
Nowadays, the domaine is run by Christophe Drag. He succeeded his father-in-law, Jean Chauvenet, in the 1990th.
Approach
Organic
Since 1994, the vineyards’ treatment turned towards organic. The vines are grassed-down in order to minimize soil erosion. For the better ventilation of grape bunches and healthier yield, severe de-budding is carried out. Harvesting is done by hand.
The grapes are totally destemmed and given a short cold maceration. The fermentation process lasts 2 or 3 weeks, depending on the appellation. After the racking, the malolactic fermentation takes place. For the maturation, which lasts 18 months, Christophe Drag uses barrels with 20 percent of new oak. The bottling is done without any fining or filtration.
