Domaine Jean Chauvenet is one of the most honourable estates located in Nuits-Saint-Georges. Its holdings cover 10 hectares of vineyards within 9 appellations. The viticulture of the domaine moves towards organic standards, as one of the predominant aims of Domaine Jean Chauvenet is to obtain organic certification in the coming years. The current owner is Christophe Drag.

The top wines of this domaine are Nuits Saint-Georges Les Damodes Premier Cru, Nuits Saint-Georges Les Vaucrains Premier Cru, Nuits Saint-Georges Les Perrières Premier Cru. The Nuits Saint-Georges Les Damodes Premier Cru 2014 and Nuits Saint-Georges Les Vaucrains Premier Cru 2012 scored 93, Nuits Saint-Georges Les Perrières Premier Cru 2012 scored 92 by the Wine Advocate.

The wines of the domaine are famous for their elegance, finesse, light style and charm.

Nowadays, the domaine is run by Christophe Drag. He succeeded his father-in-law, Jean Chauvenet, in the 1990th.

Since 1994, the vineyards’ treatment turned towards organic. The vines are grassed-down in order to minimize soil erosion. For the better ventilation of grape bunches and healthier yield, severe de-budding is carried out. Harvesting is done by hand.

The grapes are totally destemmed and given a short cold maceration. The fermentation process lasts 2 or 3 weeks, depending on the appellation. After the racking, the malolactic fermentation takes place. For the maturation, which lasts 18 months, Christophe Drag uses barrels with 20 percent of new oak. The bottling is done without any fining or filtration.
