Domaine Robert Chevillon is located in the heartland of Nuits-Saint-Georges and it is well known for its premier cru vineyards*.* The rich history of the domaine, the privilege of working a world-renowned terroir, and the territory of 13 hectares make their wines stylistically different, structured, fruity, elegant, and complex. Bertrand Chevillon, as the domain’s winemaker, uses the sustainable principles of vineyard treatment.

The top wines of this domaine are Nuits-Saint-Georges Premier Cru Les Saint-Georges, Nuits Saint-Georges Premier Cru Les Pruliers, Nuits-Saint-Georges Premier Cru Les Cailles. Nuits-Saint-Georges Premier Cru Les Saint-Georges 2010 scored 95-97, Nuits Saint-Georges Premier Cru Les Pruliers 2010 scored 94-96, Nuits-Saint-Georges Premier Cru Les Cailles 2017 scored 95 by the Wine Advocate. Robert Parker comments on Nuits-Saint-Georges Premier Cru Les Saint-Georges 2010: “I have to say, this is a stunning set of wines from Denis and Bertrand Chevillon. The Chevillons told me they were surprised by the quality of the wines given the challenges of the growing season. The 2010s saw 5-10 days of cold soak, followed by 15-21 days of cuvaison. The wines were aged on their lees in French oak barrels, 30% new for the top wines and less for the mid-and entry-level wines.”

History

Since 2003 Domaine Robert Chevillon is run by two brothers - Bertrand Chevillon as winemaker and Denis Chevillon who is in charge of vineyards. They are the sons of Robert Chevillon, who actually made the domaine famous. Bertrand and Denis Chevillon started their work in the family estate in 1990, after they set up a partnership with their father.

But the history of the domaine has started much earlier. In 1946 Robert Chevillon inherited the domaine from his father Maurice Chevillon, who was an itinerant distiller. Maurice Chevillon constantly expanded the domain by buying new plots of Premier Cru, as well as his father Eugène-François Chavillon did in the early 1900s. All the generations of Chevillons continued the business of Symphorien Chevillon who had been working vines in his own name in Nuits-Saint-Georges since the 1800s and is considered to be the beginner of the domaine.

Approach

Sustainable

The vineyard is run according to sustainable principles. Guyot pruning is used. The maturity of all vines are checked twice a week. Harvesting and sorting are made by hand; the grapes are 100 percent destalked. For the next 5 or 6 days, a cool pre-maceration is applied with a temperature of approximately 10°C. After that, the natural fermentation begins and lasts from 3 to 5 weeks; density and temperature do not exceed 34°C. Treading and pumping-over operations are carried out every day. Maturing takes from 15 to 18 months, including racking after the malolactic fermentation. For all the premiers crus the 30 percent new oak barrels are used. Wines are being blended in vats for 3 to 4 weeks. After that, they are bottled by gravity.
