Approach
Certified sustainable since 2008
Since 2008 Domaine Chofflet has been farmed according to sustainable principles with a certificate. The vineyards are ploughed. The current winemaker is Jonathan Brunot who prefers short vatting in concrete vats and long ageing in French oak barrels. In order for the wood not to hide the wine, Jonathan Brunot does not use more than 25 percent of new wood. The lees are not stirred during maturation.
