History
Laurent Mouton, the fourth generation vigneron, is the winemaker in charge at Domaine Laurent Mouton.
Laurent Mouton’s great-grandfather, Eugène Mouton, founded the winery. His grandfather, Charles Mouton, managed to extend the vineyards to 3 hectares.
In 1968, Charles Mouton’s father, Gérard Charles Mouton, took over the winery and added some parcels. Charles Mouton, along with his wife, Armelle, bottled their first vintage under domaine’s label in 1976.
Laurent Mouton started actively participating in 2002.
Approach
The vineyards of Domaine Laurent Mouton are farmed according to non-certified, close to organic approaches.
The domaine offers two white wines: one barrel-fermented, the other not. Chardonnay fruits are pressed just after the harvest and fermented for one part in temperature-controlled stainless steel vats and the other in 400-litre barrels over eight months. Ageing on fine lees ensures aromatic complexity and gives Cuvée Excellence a beautiful roundness.
The Pinot Noirs are totally destemmed, given a cool soak for a week, punched down and then pumped over. The maceration phase lasts from 12 to 20 days under uninterrupted temperature control. The wines are aged in barrels for 12 months, mostly in 30 percent of new oak barrels.
