Domaine Tupinier-Bautista is located in Mercurey, Burgundy. The estate owns 11 hectares of vines within the Mercurey slopes at the Burgundy’s Côte Chalonnaise. The viticulture is close to organic.

The current winemaker, Manu Bautista, makes superb, medium to full-bodied, layered, concentrated wines.

The top wines of the domaine are Mercurey Premier Cru Clos du Roy, Mercurey Premier Cru Les Vellées and Mercurey Premier Cru En Sazenay. The Mercurey Premier Cru Clos du Roy 2019 scored 94, Mercurey Premier Cru Les Vellées 2019 scored 93+, and the Mercurey Premier Cru En Sazenay 2019 scored 92 by the Wine Advocate.

Robert Parker’s tasting notes on the Mercurey Premier Cru Clos du Roy 2019: “The 2019 Mercurey Premier Cru Clos du Roy wafts from the glass with notes of cherries, cassis and wild berries, mingled with licorice and sweet soil tones. Full-bodied, layered and fleshy, it's velvety and sensuous, with melting tannins, superb concentration and lively balancing acids. Deep and complete, it is well worth seeking out. Bautista reminisced that he took over this parcel in 2011, when it was essentially abandoned: today, it's producing one of the appellation's finest wines.”

History

1770

Manu Bautista manages the domaine Domaine Tupinier-Bautista, assisted by his nephew Jacques Tupinier.

The roots of the domaine go back to 1770. Manu Bautista succeeded the domaine from his father-in-law, Jacques Tupinier, in 1997.

Since 2014 all the produce of Domaine Tupinier-Bautista has been bottled at the estate.

In 2017 the estate moved to new facilities - above the historic village of Touches.

Over the last 20 years, Manu Bautista has been making a significant input to vineyards' restructuration — especially to the Clos des Touches vines.

Approach

Organic

The viticulture of Domaine Tupinier-Bautista is close to organic. The vineyards are regularly ploughed.

Harvesting is done by hand. To preserve grapes' integrity, they are transferred in small crates.

The grapes are sorted twice - on the vine and a sorting table. In the winery, they are destemmed and fermented without any punching down. Maturation takes place in barrels made by Chassin, with 30 percent of new oak for the premiers crus.
