Domaine Cheveau is located in Solutré-Pouilly, Burgundy. The estate owns 20.5 hectares of vines farmed according to organic principles and biodynamic concepts, though not certified yet.

The winemakers in charge are Nicolas Cheveau, Aurélie Cheveau and Julien Cheveau. Their wines are distinguished as creamy, balanced and rich.

The top wines of the domaine are Pouilly-Fuissé and Pouilly-Fuissé Vers Cras. On Inside Burgundy, the Pouilly-Fuissé 2017 scored 89 and Pouilly-Fuissé Vers Cras 2016 scored 88.

Jasper Morris’s tasting notes on the Pouilly-Fuissé 2017: “All from Pouilly, from various plots over 50 years old, aged in 600 litre barrels for 12 months then assembled in tank. Attractive light pear fruit notes. Good weight through the middle, discreet touch of wood, opens out well behind. Minor reductive notes.”

Since 1999, Domaine Cheveau has been managed by Nicolas Cheveau along with his wife Aurélie Cheveau since 2002 and his brother Julien Cheveau since 2009.

The roots of the domaine go back to André Cheveau and his wife Marcelle Cheveau. After becoming sharecroppers in Solutré-Pouilly, in 1950, they founded Domaine Cheveau.

In the 1970s, their son Michel Cheveau joined the estate. Michel Cheveau was succeeded by his children, Nicolas Cheveau and Julien Cheveau.

The vines of Domaine Cheveau are farmed according to organic principles and biodynamic concepts, though not certified yet.

The soils are regularly ploughed, and yields are limited. Harvesting is manual.

In the winery, the grapes are pneumatically pressed whole-bunch and settled for a while. Afterwards, each plot is fermented separately on ingenious yeasts, with no chaptalization. Depending on the terroir, fermentation occurs in demi-muids, tuns, or stainless steel vats. Maturation takes place mostly in demi-muids and partly in cuves, foudres or oak casks.
