Fleshy but precise, with vibrant acids, this is one of the highlights of the range this year.”

Approach
Organic
The vineyards of Domaine Giroux are farmed organically, without certification.
In the vineyards no chemical weed killers are used, the soils are ploughed under the vines, and grassed in the rows.
The harvesting is done manually, After the slow pressing, fermentation with indigenous yeasts, at low temperature begins.
Maturation may be conducted in steel tanks, 400-litre oak barrels, or mixed, depending on the сuvée and lasts nearly 11 months. Malolactic fermentation is carried out.
Bottling is conducted after the light filtration.
