Approach

Sustainable

Domaine Georges Joillot vineyards are farmed according to a non-certified sustainable approach. The work in the vineyards is done with the help of a straddle tractor, though the disbudding, trellising, leaf removal and green harvesting are done manually.

The grapes are sorted and completely destemmed. Then put it into concrete vats for the fermentation, which lasts 2 weeks.

For maturation barrels the amount of new wood does not exceed 30 percent. The ageing process takes 12 to 14 months. The wines are bottled without filtration.
