Domaine Tollot-Beaut
Domaine Tollot-Beaut is a successful family estate already for the five generations of wine growers. It is nestled in Chorey-Lès-Beaune and covers 25 hectares of vineyards. The vines are cultivated according to sustainable principles. The current winemaker is Jean-Paul Tollot.
The top wines of the domaine are Corton Charlemagne Grand Cru, Corton Grand Cru and Corton Les Bressandes Grand Cru. The Corton Charlemagne Grand Cru 2012 scored 94, Corton Grand Cru 2016 scored 92-94, Corton Les Bressandes Grand Cru scored 93 by the Wine Advocate.
Rober Parker described the Corton En Charlemagne Grand Cru 2012: “Tasted blind at the Burgundy 2012 tasting in Beaune. The 2012 Corton Charlemagne Grand Cru from Tollot-Beaut has a very nuanced nose, mineral-driven, nicely focused, opposite in style from Olivier Leflaive’s, but in some ways just as satisfying. This has real class. The palate is fresh and vibrant with a very keen thread of acidity that is neatly embroidered into the vivacious citrus fruit. After the bravura opening it calms down during the second half and seeks refinement and elegance. Nathalie Tollot is known for her reds, but this is a very sophisticated Corton-Charlemagne, one that is beautifully crafted.”

History
Nowadays, Domaine Tollot-Beaut is managed by three cousins: Jean-Paul Tollot, Olivier Tollot, and Nathalie Tollot. Jean-Paul Tollot is responsible for the vines and vinification process. Olivier Tollot leads mechanical work on the vineyards. Nathalie Tollot is in charge of the tastings and commercial part.
They succeeded their fathers - François Tollot, Jack Tollot, and Alain Tollot.
The domaine was founded in the 1880s by François Tollot. He was succeeded by his son, Alexandre Tollot, the former Mayor of Chorey-Lès-Beaune. Alexandre Tollot married Aurélie Beaut, that’s how the domaine became Domaine Tollot-Beaut. Domaine Tollot-Beaut was one of the first domaines to bottle the wines under the domaine’s name, it happened in 1921.
The domaine owns two monopoles - Savigny-Lès-Beaune Champs-Chevrey and Chorey-Lès-Beaune Pièce du Chapitre.
Approach
Sustainable
The vines of Domaine Tollot-Beaut are cultivated according to sustainable principles.
In the winery, the red grapes are sorted on the sorting table, destemmed and fermented for nearly two weeks.
The white grapes are pressed under the pneumatic press. Alcoholic fermentation is carried out in stainless-steel tanks. Malolactic fermentation is conveyed later, during the maturation in the barrels.
The barrels are made by François Fréres; the percentage of new wood used for the grands crus is 60 percent, for the village wines is 20 percent.
