Robert Parker mentioned, “The 2009 Volnay Clos des Chenes is a bit cooler and more inward than the Taillepieds despite boasting considerable volume itself. The fruit takes on considerable darkness and richness as the wine sits in the glass. Menthol, spices, intense minerals, licorice and freshly cut flowers wrap around the huge, implosive finish. The Clos des Chenes is a wine with a bright, bright future.”

The tasting notes are flowers, berries, menthol, anise and sweet spices.

History

François Bitouzet is the winemaker managing Domaine Bitouzet-Prieur. Six generations on the paternal side have been passing the winemaking knowledge. In 2020 the family moved to new custom-built cellars in Champs de Lin, near Meursault.

Approach

Organic since 2009

Domaine Bitouzet-Prieur prefers the organic approach and has banned herbicides since 1995.

The whites are slightly crushed before pressing, while red bunches are destemmed. After that, the grape juice is cooled but not sulphured yet. The wine is fermented in barrels, usually old oak ones. New barrels are used for 25 percent for premiers crus and 20 percent for village wines. François Bitouzet uses the same barrels for the same wine type.
