Domaine Jean-Marc & Thomas Bouley is located in Volnay, Burgundy. Today, the domaine’s vineyards consist of 29 plots, where the current winemaker, Thomas Bouley, practices close to an organic approach.
Pommard Premier Cru Les Fremiers, Pommard Premier Cru Les Rugiens, and Volnay Premier Cru Clos des Chênes are considered the top wines of the domaine.
The Pommard Premier Cru Les Fremiers 2015 scored 97, Pommard Premier Cru Les Rugiens 2019 scored 96, and Volnay Premier Cru Clos des Chênes 2019 scored 95 by the Wine Advocate.
Tasting the Pommard Premier Cru Les Fremiers 2015, Robert Parker said: “... a stunning effort that unfurls in the glass with a deep bouquet of plums, wild berries, blood orange, rose cocoa and spices. Full-bodied, layered and multidimensional, its velvety attack segues into a deep and concentrated core, framed by rich, powdery tannins and lively acids. Seamless and precise, it's impeccably balanced, concluding with a long, resonant finish. Bouley contends that his low yields helped vines fatigued after the hail in 2012, 2013 and 2014 bring their grapes to full maturity.”
Tasting style may be described as full-bodied and sensual, layered and concentrated with a deep core of fruit framed by lively acids and flowery aroma, and unusually refined tannins.
History
1919
At present, the domaine is managed by Thomas Bouley, who joined the winemaking at Domaine Jean-Marc & Thomas Bouley. The domaine is managed by Thomas Bouley since 2012.
The Bouley family has been cultivating vineyards since the early 20th century. In 1919 François Bouley founded the domaine.
Jean-Marc created his own domaine in 1974, to which his father’s, Christian’s Bouley vineyards were added in 1984.
In 2016, the new cellars near the house were built.
Approach
Domaine Jean-Marc & Thomas Bouley practices close to organic approaches avoiding the use of weedkillers or severe fertilizers.
The red wine is grown in the appellations of Volnay, Pommard and Beaune, White in Meursault. Some vineyards have relatively young vines where Thomas Bouley sometimes does slight hedging. The whole-bunch vinification is done for certain wines. All the vines are ploughed. The manual work includes pruning, de-budding and trellising. Only 6 to 8 bunches of grapes are kept per plant. The harvest is done manually.
The grapes are sorted at the winery on a vibrating table. The fermentation takes from 2 to 3 weeks. The wine ageing in oak barrels takes 15 to 20 months.
Bottling is done at the domaine and later on, distributed around the globe.
