Domaine Chanterêves
Domaine Chanterêves is newly-created domaine in Savigny-lès-Beaune. In 2020 the domaine had obtained 4.5 hectares of vineyards, which are farmed organically, but without certification. Tomoko Kuriyama is in charge of vinification in the domaine.

Nuits-Saint-Georges Premier Cru Les Damodes 2019 scored 93+, Chassagne-Montrachet Premier Cru Morgeot 2019 scored 93, Corton Bressandes Grand Cru 2019 scored 93 by the Wine Advocate.
Robert Parker comments on Nuits-Saint-Georges Premier Cru Les Damodes 2019: “The 2019 Nuits-Saint-Georges 1er Cru Les Damodes opens in the glass with notes of black raspberries, sweet spices, petals and loamy soil. Medium-bodied, bright and lively, with a concentrated core of fruit, refined tannins and a long, perfumed finish. I can't wait to see how it develops with a little bottle age.”
History
2010
Domaine Chanterêves was founded in 2010 by Guillaume Bott and Tomoko Kuriyama. Before that Guillaume Bott was the right-hand man of Simon Bize at his domaine in Savigny-les-Beaune and Tomoko Kuriyama was winemaker of Friedrich Altenkirch in Rheingau, Germany. The couple met when Tomoko did the 2005 harvest at Domaine Simon Bize, where Guillaume has been working since 2002.
Approach
Organic without certification
Domaine Chanterêves vineyards are farmed organically but without certification. The domaine has no destemming machine, that’s why red wines are made entirely with whole bunches. Vinification is conducted without sulfur, and there is no pumping over. A light foot-treading is conducted to break up the cap. A great deal of attention is taken to avoid any sign of deviation. The house's whites are crushed by foot and then pressed for a very long time. Very few rotations are conducted before fermenting in the barrel. Ambient yeasts are used.
