Romuald Boursot has been managing winemaking at Domaine Boursot Père & Fils since 2012. Together with his brother - Romaric Boursot they are the fifteenth generation of the family.

The domaine was founded by Guillaume Boursot in 1550. Many years after the estate was transmitted from father to son.

It was Jean-François Boursot, who started bottling in 1974 and opened the first Chambolle-Musigny tasting cellar.

In 1993, Maison Boursot Père & Fils was created, which allows expanding the range of appellations by purchasing grapes.

Approach

Organic

The vineyards of Domaine Boursot Père & Fils are farmed organically, without the certification. Treatments are essentially limited, harvesting is done manually.

The grapes are sorted in the vineyards and then 100 percent destemmed. Cold maceration is done, which lasts 4 days. After that, fermentation without adding yeast starts. Sometimes punching down can be done, but pumping over is more preferable. Vinification lasts 20 days at temperatures from 32 to 33°C.

It takes from 8 to 18 months for wines to get matured in oak barrels. The barrels are used from two coopers: Damy and Cadus. The percentage of new wood is from 50 to 100 percent.

Light filtration is carried out before the bottling, which starts before the following Christmas.
